Sunday Funday: Super Bowl

In celebration of Super Bowl Sunday, we are introducing a new section on our blog, Sunday Funday! Despite our connection to football, it’s no secret that the main reason we tune in to the Super Bowl is for the half time show. Let’s face the facts, football games can be long and sometimes confusing for those of us who are athletically-challenged. We are still trying to figure out the difference between a turnover and an interception. The one thing we do know is that snacks and drinks are easily the best part of the day. We’ve put together some food and drink recipes that are sure to score you a viewing party invite, regardless of whether or not you know the score!

Here is what we’re serving…

Tequila Flank Steak (a la Jillian Harris)

Ingredients:

1 cup roughly chopped garlic (about 3 bulbs)
3/4 cup freshly squeezed lime juice (about 8 large limes)
1/2 cup Casamigos tequila
1/4 cup soy sauce
1 bunch roughly chopped fresh cilantro
1 jalapeno pepper, seeded and diced
1 serrano pepper, seeded and diced
1 teaspoon cumin
1 tablespoon freshly cracked black pepper
1 1/2 to 2 pounds flank steak (serves 6)
12 corn tortillas, wrapped in foil

Directions:

Combine the garlic, lime juice, tequila, soy sauce, cilantro, peppers, cumin and black pepper in a resealable plastic gallon bag. Add the steak and let marinate in the refrigerator overnight or a minimum of 2 hours.

Remove the steak from the marinade, reserving the marinade. Put the marinade in small saucepot and bring to a boil. Then strain and reserve.

Place the steak on the grill. Cook for 4 minutes, turn 180 degrees, and cook for 3 minutes more (to create cross grill marks). Flip over and finish cooking for 3 to 5 minutes, depending on desired doneness. Remove from the grill to a cutting board and let rest, lightly covered, for 5 minutes.

Slice against the grain, and serve immediately with the reserved marinade, garnishes, tortillas and hot sauce.

Casamigos Punch
 

Ingredients:
1.5 parts Casamigos Blanco
1/2 part Lime Juice
1/2 part Strawberry Juice
1/2 part Jalapeño

Directions:

In a large punch bowl, mix the tequila, lime juice and strawberry juice. We suggest using frozen fruit instead of ice to avoid watered-down drinks! Garnish with a jalapeno and serve.
