Sometimes when hunger strikes, it’s hard to not crack and buy a mid-afternoon cookie. But not to fear, you can be prepared with these satisfying homemade peanut butter granola bars devised by Melanie Morais of Born Lippy Style.
Ingredients
- 2 cups quick oats
- 1 cup Rice Krispies Cereal
- 1/2 cup of flax seed
- 3/4 cup 100% peanut butter
- 1/2 cup of honey
- 1/4 cup brown sugar
- 1/2 tsp of vanilla extract
Directions
1. Line an 8×8 baking dish with aluminum foil and set aside.
2. In a large mixing bowl, combine Oats, Rice Krispies Cereal and Flax Seed.
3. In a microwave safe bowl combine Peanut Butter, Honey, Vanilla and Brown Sugar. Microwave in 30 second increments, stirring in between, until melted and smooth.
4. Using a spatula or your hands, combine the peanut butter mixture with the dry ingredients.
5. Press into the 8×8 baking dish and refrigerate for 1 hour.
6. After 1 hour, remove from baking dish and cut into bars.
*If Flax Seed is unavailable you can substitute with an additional ½ Cup Rice Krispies.
Serve and enjoy! These will last a full week of healthy snacks.
